Red Vegan Pesto
7/20/2014 05:38:00 pm
The ever-so-creative Julia from the blog Funkelfaden told me that she always makes her own pesto - since I love that stuff but have yet to find a vegan version (maybe I just haven't looked closely enough) I was thrilled that her version uses nuts instead of hard cheese! You'll need 12 dried tomatoes, 100g hazelnuts, 1 clove of garlic, 2-3 tbsp oil, pepper and salt.
Now put the hazelnuts in a blender and mix. Add the rest of the ingredients and purée until you have a nice smooth-ish mixture. Now it's ready to be served with all kinds of stuff - obviously, heart-shaped pasta is particularly suitable...

Looks delicious!
ReplyDeleteThis looks amazing! I always make my own pesto too. I think for a vegan version you can just leave out the parmesan and make it with only basil, pine nuts, olive oil and garlic.
