Try This: Easy Vegan Quiche (Tofu Free)

Wenn ich eine Quiche mache, greife ich eigentlich immer auf dieses Rezept hier zurück, da es immer gelingt und gut schmeckt. Als ich nun aber das neue Rezept von The Happy Pear gesehen habe, welches statt Tofu Kichererbsenmehl und Sojamilch verwendet, musste ich das doch auch mal ausprobieren. Gesagt, getan!



Whenever I make a quiche, I always use this recipe here, because it always works and tastes good. But when I saw The Happy Pear's new recipe which uses chickpea flour and soy milk instead of tofu, I had to give it a try. No sooner said than done!



Um den Prozess zu erleichtern, haben wir fertig gekauften Mürbeteig genommen - selber machen geht aber natürlich auch! Für 5 bis 10 Minuten blind backen oder, so wie ich, mit der Gabel Löcher in den Teig stechen.
150 g Kichererbenmehl
250 ml (Soja-/Reis-/...)Milch
gute Prise Salz, Pfeffer, geräuchertes Paprikapulver und Chillies
vermischen. Dazu
eine rote Zwiebel
eine geriebene Zucchini
ein paar Cherrytomaten geben.
Die ganze Mischung in die Quicheform geben und für weitere 20 Minuten backen bei 180 Grad.
Bei uns wurde die Quiche mit Salat, kleinen Kartoffeln und Mais gegessen - sehr, sehr lecker!!


In order to make the process easier, we used ready-made shortcrust pastry - but of course you can also make it yourself! Bake blind for 5 to 10 minutes or, like me, pierce holes in the dough with a fork.
Mix
150 g chickpea flour
250 ml (soy/rice/...) milk
good pinch of salt, pepper, smoked paprika powder and chillies.
Add
one red onion
one grated courgette
a couple of cherry tomatoes.
Pour the whole mixture into the quiche tin and bake at 180 degrees for another 20 minutes.
We ate the quiche with salad, small potatoes and sweetcorn - very, very tasty!
