Try This: Easy & Cheap Vegan Dinner

One of the main prejudices I constantly hear about vegan eating is that it is too expensive. True - if you insist on consuming replacement products (vegan sausages, yoghurt, sweets, ...). Not true, if you mainly eat what is vegan anyways: pasta, rice, bread, vegetables, fruits are a great and affordable basis for good eating. Today, I want to show you a dinner idea (with starter!) that doesn't cost the world and is super filling!

Starter: Balsamic Vinegar Mushrooms

For the starter, balsamic vinegar mushrooms on toast, slice mushrooms and fry them with finely chopped garlic in some oil. When almost done, add some balsamic vinegar, salt and pepper to taste. Toast the bread and arrange with some lettuce, if you have some at home. Delicious and easy!

Main: Salty Potatoes, Veg and Tomato Olive Pesto

For the main, you need small potatoes (preferably organic as we will eat them with the skin) and loads of veg - whatever you fancy and/or have lying around at home. For the dip, get olives and dried tomatoes out.

Boil the potatoes and add loads (loads!) of salt - I think I used like 5 tablespoons. We want them to have a proper salty crust when we drain them. Chop the veg, fry and add salt and pepper. For the pesto, add olives and dried tomatoes to a blender and whiz until it is suitable to use as a sauce/dip. I also sliced an avocado and added some lettuce to the plate. And voilà! It doesn't actually need a recipe, but maybe this inspired you to have a plant-based dinner?

  6. but what is the point of not peeling the potatoes? I mean, is the crust really tasty and edible? The vitamins are there even if you peel them after boiling. I do love me shrooms, though! I've been vegetarian for about ten years or more.
