A Little Guide to Bread Baking

Wenn es ums Brot backen geht, gibt es wahnsinnig viele Variablen. Mehlsorte, Wassertemperatur, Knetzeit, Gehzeit und Backzeit sind nur einige der Aspekte, die das Brot beeinflussen. Wir halten uns generell an ein paar Punkte, die sind jedoch nicht fix und können immer variiert werden. Seit wir selbst Brot backen, haben wir das Brot immer ohne Brotform gebacken. Meist kommen da auch gute Resultate bei raus, aber manchmal sinkt das Brot unter seinem eigenen Gewicht zusammen und dann bekommt man etwas, das eher wie Fladenbrot aussieht und toasten kann man das erst recht nicht. Seit einer Weile haben wir daher nach einer geeigneten Form gesucht, die ein schönes “Toastbrot” ermöglicht. Wir wollten auf keinen Fall eine Metallform mit Anti-Haft-Beschichtung, da diese sich oft nach ein paar Nutzungen verabschiedet und abbröckelt. Diese Mason Cash Ton-Form war dann die Lösung. Sieht wunderbar rustikal aus und sollte eine schöne Kruste bilden. Dieses Basic-Rezept haben wir für unsere neue Ton-Form benutzt: 500g Mehl (Type 550), 7g Hefe, 10g Salz in einer Schüssel vermischen. Zusätzlich kommen noch Sonnenblumenkerne, Sesamsamen und geschrotete Leinsamen hinzu, da sie voller guter Nährstoffe sind. Alles gut vermischen.



There are so many variables when it comes to bread baking. Flour type, water temperature, kneading duration, proofing and baking time are just some of the aspects which dictate the final loaf. We generally stick to a consistent set of rules but they are not carved in stones and are open to adjustment. Since we have been baking bread we’ve allowed the loaf to bake without the use of a bread tin or form. Most of the time this produces decent results but there are occasions when the dough sinks down under its own weight and you end up with something resembling a flatbread, which is terrible for toast. We’ve been on the lookout for an appropriate form to produce a nice ‘farmhouse’ loaf. We didn’t want a metal form with a non-stick coating as it often chips off after a few uses. Recently we found a Mason Cash Terracotta form here. It looks awfully rustic and is said to produce a proper crust. Here is a basic loaf recipe made using our new terracotta form: In a large mixing bowl add 500g of flour (I’ve used type 550), 7g of yeast, 10g of salt. Additionally I’ve added sunflower seeds, sesame seeds and ground linseeds as they are packed with fantastic nutrients. Mix all these ingredients together.

Nach einer Weile wird sich der Teig zu einer Kugel formen; jetzt noch weitere 10 Minuten mit den Händen kneten, bis der Teig seidig-glatt ist. Dies kann man auf einer gemehlten Arbeitsfläche tun, aber da unsere Schüssel sehr groß ist, knetet Aidan oft einfach direkt da drin.



Pour in the water (320ml) gradually while you continue to mix. Eventually the dough will come together into a ball. At this point you need to get your hands in there and knead it for 10 minutes until the dough is silky smooth. You can do this on a floured work surface but I’m just doing it in the bowl as it’s very spacious. 



Etwa 2 Esslöffel Olivenöl dazugeben und einarbeiten. Dies kann zu jeder Zeit beim Knetprozess getan werden. Wenn das Öl eingearbeitet ist, den Teig abdecken und etwa 1 Stunde lang gehen lassen (oder bis er etwa die doppelte Größe erreicht hat).

Add about 2 tablespoons of olive oil to the dough and work that in. You can do that at any stage of the mixing process. When the oil is mixed in cover the dough and allow to rise for an hour or until it’s doubled in size. 



Wenn der Teig fertig gegangen ist, aus der Schüssel nehmen und die Luft herauskneten. Dies dauert nur etwa 30 Sekunden.

When the dough has risen take it out and knock the air out of it. This should only take about 30 seconds.



Den Teig in eine brotige Form bringen und in die gemehlte Brotform geben. Noch einmal mit einer Plasticktüte abdecken und noch einmal etwa eine Stunde geben lassen.



Shape the dough into something that resembles a loaf and placed it into a well floured form. Cover the form with a plastic bag and allow to rise for another hour or so. 



Den Ofen auf 220°C oder Gas Stufe 7 vorheizen. Man kann eine Schüssel mit Wasser in den Ofen stellen, um Dampf zu kreieren und damit eine knackigere Kruste. Dies haben wir dieses Mal nicht getan, da wir nicht sicher waren, wie das mit der Terrakotta-Form funktionieren würde. Im Ofen etwa 30 Minuten backen, aber immer ein Auge darauf werden, da jeder Ofen anders ist. Einmal das Brot antippen, und wenn es hohl klingt, ist es sehr wahrscheinlich fertig.

Preheat your oven to 220c / gas mark 7. At this point you could place a dish of water in the oven to create steam and ultimately a crispier crust. In this case I didn’t as I wasn’t sure how the form would handle it. When the oven has reached the required temperature put the loaf in. It should be in for about 30 minutes but I’d keep an eye on it as every oven is different. After 30 minutes tap the top of the loaf, if it sounds hollow it’s probably done. 



Wir waren recht zufrieden mit dem fertigen Brot. Form und Größe waren gut und es hat auch gut geschmeckt. Das nächste Mal werden wir es wahrscheinlich mit der Schüssel Wasser für eine knackigere Kruste probieren!

We were quite pleased with the final loaf. The size and shape were good and it tasted great. Next time I will probably add the dish of water to produce a crispier crust.
