Vegan Christmas Fruit Cake

So schnell geht das immer. Plötzlich feiert man schon Advent, backt Plätzchen und packt Geschenke ein! Dieses Jahr habe ich mich mal an einem richtig traditionellen Früchtekuchen versucht (Rezept von hier) und ich sage euch, wenn ihr auf Diät seid, das Ding ist nichts für euch! Dafür reicht ein Stück wahrscheinlich aus, um einem genug Energie für eine ganztägige Winterwanderung zu liefern...
It always runs that fast, doesn't it? It was just summer and suddenly, Advent Sundays are celebrated, biscuits are baked and gifts are wrapped. This year, I tried my hands on a really traditional fruit cake (recipe from here) and I tell you, if you are on a diet, this thing is not for you! On the other hand, one piece will probably be enough to give you enough energy for a full day of hiking...
(Ich habe eine 18cm-Springform genommen, diese mit Margarine eingerieben und mit Semmelbröseln überzogen - verhindert ein Anbacken.)
150g braunen Zucker
50g kandierte Orangenschale
50g kleingehackte getrocknete Aprikosen
400g gemischte Weintrauben
2 EL Rum oder Orangensaft
vermischen.
2 EL gemahlene Chiasamen und 6 EL Wasser vermischen, bis die Masse fast schleimig ist. Die Masse zusammen mit der Frucht-Zucker-Mischung und
225g Kokosöl, geschmolzen
225g Mehl
1/2 Päckchen Backpulver
60g gemahlenen Mandeln
vermischen.
Die Masse in die Kuchenform geben und mit Trockenfrüchten und Mandeln dekorieren. Den Kuchen bei 150°C für 2 - 2,5 Stunden backen. Nach einer Stunde bereits mit Alufolie abdecken. Den Großteil der Zutaten habe ich online bestellt, habt ihr einen Lebensmittel-Lieferservice schon mal ausprobiert?
(I used an 18cm cake pan, greased it with margarine and covered it with breadcrumbs - prevents the cake from sticking to the tin.) Mix

50g candied orange peel
50g chopped dried apricots
400g mixed sultanas
2tbsp rum or orange juice.
Mix 2tbsp ground chia seeds and 6tbsp water to form a gloopy paste. Mix this paste in with the fruit-sugar-mix and
225g coconut oil, melted
225g self-raising flour
60g ground almonds.
Add the dough to the cake tin and decorate with dried fruits and almonds. Bake the cake at 150°C for approx. 2 - 2.5 hours. Cover the cake with tin foil after one hour. I purchased the bulk of the ingredients online, have you tried a food delivery service before?

Obwohl ich jetzt schon im Advent angekommen bin, hab ich ans Backen noch gar nicht gedacht. o.o Na ja, irgendwann werden meine Schwester und ich sicher nochmal den Kampf mit unserem Ofen aufnehmen... ;)

This looks delicious! Fruit cakes can be a bit of a joke here in the US, the ones sold at stores are so gross! But homemade traditional ones like this are so good. I made one a few years ago and it surprised everyone that it was actually good. Haha!
